Abstract: Almond kernels (Prunus Amygdalus L.) of the family Rosaceae were investigated for the oil seed characteristics. The physico-chemical properties and fatty acid composition of the seed oil were examined. Almond kernels were found to be rich in oil. The oil contains an appreciable amount of unsaturated fatty acids (87.37%) and saturated fatty acids (12.61%). The oils were analysed for specific gravity, iodine and saponifícation value, refractive index, and fatty acid composition.

Oil extraction:- Cold press method was used to extract oil from the almond kernel. After the extraction process, the oil left to let the sludge settle down and thereafter it was filtered using a cloth pad filter to remove impurities and then kept in a glass bottle under 18°C.
